Chocolate Peanut Pie
Description
Preparation: Time: 20 minutes
Cook Time: 35-40 minutes
Difficulty: Low - Medium
Ingredients
3/4 c. dark corn syrup
1/4 c. PB2, reconstituted
3 large eggs
1/4 c. sugar
1 tsp. vanilla extract
1/8 tsp. salt
3/4 c. coarsely chopped cocktail peanuts, (salted or unsalted) plus additional for garnish
1 unbaked 9" pie shell
whipped cream for garnish, if desired
Methods/steps
Heat oven to 425°. Blend corn syurp and peanut butter in a medium mixing bowl. Mix in eggs, sugar, vanilla and salt until smooth. Arrange chopped peanuts on bottom of unbaked pie shell. Pour peanut butter mixture over peanuts. Bake 10 minutes then reduce oven to 350°. Bake for an additional 25-30 minutes or until set. Cool before serving. Garnish with whipped cream and peanuts. if desired.

Besides just being a delicious product, PB2 and Chocolate PB2 are incredibly versatile. Uses are limited only by your imagination! Some of our favorite ways to enjoy both PB2 and CPB2:
* When added to almost any tomato based dish – salsa, BBQ sauce, Mexican dips, spaghetti sauce – PB2 mellows out the acidic flavor of the tomatoes.
* Any fruit dipped in PB2 or CPB2 powder is delicious! Tip: Spoon PB2 or CPB2 into a zipper bag. Cut a banana into bite size pieces and place in bag. Zip bag closed and shake to coat the fruit – enjoy. This is an easy, kid friendly, healthy snack. Good with apples and pineapple too.
