Pantry Granola Bars

1 cup: PB2

2 cups: old fashioned oatmeal (uncooked)

2 cups: Cascadian Farm Maple Brown Sugar Granola cereal (or your choice of a healthy cereal)

1/2 cup: almond butter (or cashew)

1/4 cup: ground flax seed

1/4 cup: honey

1/4 cup: agave nectar

1/4 cup: maple syrup

2TBS: molasses

1/4 cup: sunflower seeds (or any other you choose)

1/2 cup: Craisins

1 tsp: vanilla extract

2  eggs mixed (for vegan add 1 banana instead of two eggs)

1/2 tsp: cinnamon

1/4 tsp: cayenne pepper

1/4 tsp: ground ginger

1 TBS: orange blossom water (optional)

Methods/steps

Preheat oven to 350°.  In a large bowl stir together PB2, almond butter, honey, agave nectar, maple syrup, molasses vanilla, eggs (banana), spices and water.  Whisk together until well blended.  Add dry ingredients, stirring until everthing is coated.  

 

Spray a large glass baking dish (13x11 or larger) with cooking spray. Pour granola mixture into pan and press firmly with a rubber spatula. Bake for 20 minutes.

 

Allow to cool and cut into bars.  

For chewy bars stop here. 

For crunchy bars place the cut bars about 1/2" apart on a foil lined cookie sheet.  Bake for 8 minutes then carefully turn them over and cook for additional 5 minutes. Allow to cool.

 

Store in airtight container. Can be kept in freezer for 6 months.

 

 

 

 

 

 

 

Additional Tips

These bars can be a meal replacement - they are packed with protein, fiber, whole grains, omega 3's, and healthy, easily digestable natural sweetners.  Have fun and make them your own by adding any variety of ingredients.

* When added to almost any tomato based dish – salsa, BBQ sauce, Mexican dips, spaghetti sauce – PB2 mellows out the acidic flavor of the tomatoes.

* Any fruit dipped in PB2 or CPB2 powder is delicious! Tip: Spoon PB2 or CPB2 into a zipper bag. Cut a banana into bite size pieces and place in bag. Zip bag closed and shake to coat the fruit – enjoy. This is an easy, kid friendly, healthy snack. Good with apples and pineapple too.

* For a really low-cal sandwich, mix PB2 with grape juice. Spread onto 1 or 2 slices low-cal, low fat bread - a really delicious, calorie conservative, filling snack!
