1/2 c. Chocolate PB2 powder
4 Tbs. applesauce - no added sugar
4 Tbs. eggwhites
1/2 tsp. vanilla extract
4 Tbs. room temperature butter, whipped butter or buttery spread
1/2 cup brown sugar, not packed
4 Tbs. Splenda
2/3 c. whole wheat flour
1 (heaping) tsp. baking powder
pinch salt
1 1/2 c. old fashioned oats
1/4 c. dark chocolate chips

Methods/steps

Preheat oven to 350°.  In medium bowl, combine PB2 powder with applesauce, egg white and vanilla - blend thoroughly with wire whisk or electric mixer.  Add butter, brown sugar and Splenda - mix until well combined.  Next, add flour, baking powder and salt.  Stir until blended and then add oats, mixing well.  Last, add chocolate chips.  Line a large baking sheet with parchment paper.  Spoon batter onto sheet in equally sized and evenly spaced mounds.  Bake for 10-12 minutes - test for doneness with a toothpick.  When done, remove from oven and cook for 1 minute before transfering from pan to wire rack.  Cool completely before serving.

* When added to almost any tomato based dish – salsa, BBQ sauce, Mexican dips, spaghetti sauce – PB2 mellows out the acidic flavor of the tomatoes.

* Any fruit dipped in PB2 or CPB2 powder is delicious! Tip: Spoon PB2 or CPB2 into a zipper bag. Cut a banana into bite size pieces and place in bag. Zip bag closed and shake to coat the fruit – enjoy. This is an easy, kid friendly, healthy snack. Good with apples and pineapple too.

* For a really low-cal sandwich, mix PB2 with grape juice. Spread onto 1 or 2 slices low-cal, low fat bread - a really delicious, calorie conservative, filling snack!
